Szent Donát is a small organic winery located in the small village of Csopak, on the northern shore of Lake Balaton. Influenced by the burgeoning craft beer scene in Hungary, Tamás Kovács, the winemaker and owner of Szent Donát, decided to experiment with an unfiltered, not disgorged, bone dry Pet-Nat-style white wine in small format (375 ml).

The wine is made from Olaszrizling (Welschriesling), coming from the limestone soils in close proximity to Szent Donát’s winery. The fermentation was partially spontaneous and partially controlled with organic yeast in stainless steel tanks, and the wine completed a second fermentation in bottle. Unfiltered, unfined, not disgorged, and no sulfur added. The wine is dry and leesy, with green apple, marzipan, lemon-lime and salt.
